Can’t Get Enough Sweet Potato Chips

Don’t you just love the vibrant orange colour of these Sweet Potato Chips or Fries!  Teamed with the green of the Guacamole dip it makes a very colourful dish indeed.  We came across Sweet Potato Chips in lots of restaurants on our recent New York trip and couldn’t wait to make them when we got home.  Here’s our healthy version, great as a snack or side to a main meal.  I’ve called them “can’t get enough” as I couldn’t get enough of the sweet tasting potato and guacamole combo.  Try them for yourself, you can make these two in no time at all.

Sweet Potato Chips
1 large sweet potato, peeled & cut into chips
1 Tblsp approx coconut oil, melted

sea salt

Preheat the oven to 200C/392F
Place the sweet potato chips in an ovenproof dish and pour the coconut oil over them to coat.
Sprinkle with sea salt.  Place in the oven and bake until golden and soft.  Serve with Guacamole

Guacamole
1 1/2 – 2 avocadoes,
1/2 red onion, finely chopped
1/2 tomato, finely chopped
juice of 1/2 lemon or lime

sea salt & pepper

Scoop avocado from the skin, place into a bowl and mash with a fork.
Add the other ingredients and mix together, taste for seasoning and lemon/lime and adjust to taste.

Spoon into a small serving bowl.

    Oooh I love sweet potato chips too! I tend to cut mine as more ‘wedges’ rather than chips, and I’ve not tried using coconut oil – but I’ll give this a go next time. I usually have my sweet potato wedges with sour cream mixed with some cumin, but I love the idea of a guacamole dip – yummy!

    You had me at Guacamole!!!….what a great combo. Sweet potato fries are so underated. I too like the idea of cooking the fries in coconut oil….suddenly this yummy snack is sounding very healthy too x Thanks for sharing Catherine x
