Healthy Banana Muffins

If you feel like doing some baking on the weekend, here’s two healthy banana muffin recipes you can feel good about eating.  The other day I was at the supermarket, they were selling bags of over ripe bananas for $2.  I bought a bag and have used them to make a healthy banana and coconut loaf and a couple of batches of these healthy banana muffins.  Featured here are the muffins, Banana and Date and Banana, Zucchini and Walnut.

The first time I saw muffins in a cafe/foodstore was on the first stop of our honeymoon in Auckland, New Zealand around 22 years ago.  They were the big texas size muffins, displayed on the counter in their muffin tin.  Not long after that they become popular in Melbourne and have been ever since.

I found some unbleached baking patty pans at the supermarket which give them a rustic look I like.
Here’s the recipe if you’re in the mood for whipping some up this weekend.
Healthy Banana Muffins with Dates

3/4 cup low fat milk or buttermilk, 1/2 cup maple syrup or honey, 1 egg, 1/2 cup rice bran oil, 2 overripe bananas mashed, 22og wholemeal self raising flour/wholemeal spelt flour, 3/4 cup dates (chopped).

Preheat the oven to 180 degrees celcius.
Line a 12 cup muffin tin with patty pan papers.
In a bowl whisk together the milk, maple syrup or honey, egg and oil then mix through the mashed bananas.
Sift the flour into a bowl and mix in the dates (mixing the dates with the flour helps to stop them sinking when baked).
Stir wet and dry ingredients together with a rubber spatula or wooden spoon, taking care not to over mix as this will result in tough muffins.  Divide mixture evenly among the patty pans and sprinkle with pumpkin seeds.
Place in the oven and bake for 20 to 25 minutes until muffins are browned and a wooden skewer inserted comes out clean.
