Baked Leek and Goat’s Cheese Risotto

As promised after posting this risotto on instagram and having such an enthusiastic response, here’s the recipe.  It’s a very tasty dish and Alison from Green With Renvy commented it would make a great Meatless Monday dish if any of you are participating in that.

The recipe is from Bill Granger’s book “Easy” and it is indeed * easy*, it really takes no time at all to put this one together, lovely as a mid week meal.

Baked Leek and Goat’s Cheese Risotto

2 tblsp olive oil
25g unsalted butter
1 medium onion, finely chopped
2 leeks, cut lengthways and finely sliced
2 garlic cloves, crushed
1 tsp salt
250g (1 1/4 cups) arborio rice
850ml (3 1/2 cups) chicken stock, heated
120g soft goats cheese, (rind removed) and chopped (I use Meredith Goats Cheese)
50g (1/2 cup) parmesan cheese, grated

Preheat the oven to 200 degrees.  Preheat a large ovenproof dish over medium heat.  Place the olive oil, butter, onion, leek, garlic and sea salt in the dish and cook, stirring every now and then for approx 6 minutes until vegetables are soft.  Pour in the rice and stir for another minute.

Pour in stock and bring to the boil.  Take off the heat and stir in the two cheeses.  Place lid on dish and bake for 30 minutes or until rice is cooked.  Remove cover and place under a hot grill for approx 10 minutes until the top is golden brown.  Serve with a green salad.

    We love risotto and I'm lousy at making it! (Always from a bag or box for me…hangs head in shame!) Anyway moving on to things I CAN make: leeks! I love them too! I had creamed leeks at a restaurant the other night that were divine! This sounds even better. I'll try it tonight and report back with my anticipated risotto success!
