Cauliflower Soup

This was demolished in our house last night, it really is a lovely flavoured soup if you like cauliflower.
On researching cauliflower soup, I noticed alot of recipes had cream, this one doesn’t, instead has a dash of milk (you can use soy milk if allergic to dairy).

The Cauliflower Soup Recipe

1 onion, diced
2 cloves garlic, finely sliced
1 potato, peeled and finely diced
1 head of cauliflower, cut into small florets
7 cups chicken stock
good dash of milk
3/4 cup tasty cheese
3 handfuls parmesan cheese

Pour around 1 Tblsp olive oil into a heated pot then add your onion, garlic and potato.  Stir and cook till onion is tender on medium low heat (approx 5-6 minutes).

Add cauliflower and stock and simmer until potato and cauliflower are very tender (approx 25 minutes)

Puree until smooth with a stick blender.  Then stir through milk and cheese. Season to your taste and serve warm.

NOTE:  If you are allergic to dairy use soy milk and soy cheese.  I’ve heard of a good soy cheese from a company called King International, who make King Land Soy Products, apparently their Soya Cheddar is very good.  Here’s a link to their stockists in Australia.  Otherwise you can leave the cheese out altogether.

Not sure if all soy cheese melts so you’d have to check that out as well.
