Vietnamese Chicken Salad

Hi All, we are officially out of Summer now and into Autumn.  Summer temperatures are hanging in there though with around 30 degrees forecast all week.
It’s hard to know what to cook for dinner when the weather’s so don’t want to heat the house up by using the oven.  That’s where barbeques come in, you can cook some marinated meat and make some nice salads and everybodies happy.  Tonight we’re having asian marinated lamb cutlets and a trio of salads, one of them being this Vietnamese Chicken Salad.
This salad is so light and fresh and the dressing is that combination of sweet, sour and salty that makes asian dressings so good.  Hope you’ll give it a go, I can’t get enough of vietnamese food at the moment.

Vietnamese Chicken Salad
Recipe adapted from

Serves 4

1 chicken breast fillet
4 cups shredded cabbage, approx.
2 carrots, peeled and cut into batons
Handful of mint leaves (chopped)
Handful of coriander leaves (chopped)
1/2 cup salted roasted peanuts (left whole)

60 ml lime juice
60 ml fish sauce
1 long red chilli (deseeded if you prefer & chopped)
2 Tablespoons brown sugar

Whisk all dressing ingredients together in a jug until sugar has dissolved.

Place the chicken fillet in a saucepan, cover with cold water and bring to the boil over medium heat.
Reduce heat to low, cover  and simmer turning once on low heat for 10-12 minutes or until cooked through.  Remove from pan, cool and shred.

Place cabbage, carrot, mint, coriander, peanuts and chicken in a large bowl.  Drizzle with dressing, mix to combine.  Serve on a platter garnished with extra peanuts and fried shallots.

    Looks gorgeous Catherine, I love Asian salads and you're right perfect for this weather we've been having. It's taken a pretty cold turn where I am though, so I've been breaking out the soups and stews :)

    I love Vietnamese too and this salad looks yum. Funny, there's not a lot of good asian restaurants here, loads of Indian and they do it so well. Making the most of salads also while the good weather is here. M x
