Chocolate Cookies


It was time for a chocolate fix around this house and I thought these cookies would fit the bill nicely.

They are double chocolate..melted chocolate in the mixture and chocolate chunks stirred through at the end so when you bite into one you get some soft melted chocolate..hmmm.

These cookies come from a book by Donna Hay called “Chocolate” my Mum bought me a couple of years ago for my birthday.  As well as munching on chocolate cookies this weekend did I mention it’s a long weekend.  We have a festival called Moomba, which we celebrate once a year.  It’s a free community festival that runs for four days and includes a myriad of events, the highlight being a parade of floats down the main city street of Melbourne – Swanston Street.  

Two celebrities are usually crowned King and Queen of Moomba for the parade but this year there will be seven Kings and Queens chosen from the real heroes of our city.

The Victorian community heroes include the Country Fire Authority (CFA), Metropolitan Fire Brigade (MFB), Victoria Police, Victoria State Emergency Services (SES), Ambulance Victoria, St John Ambulance, Land and Fire Management Division of The Department of Sustainability and Environment and the Salvation Army. Seven staff and volunteers have been selected to represent their organisations and the people behind the uniforms as the Kings and Queens of Moomba 2013.  

Whatever your doing this weekend, enjoy every moment..maybe you could even fit in some time for double chocolate cookie baking!

Double Chocolate Cookies

110g (3 12 oz) unsalted butter, softened
3/4 cup (130g/4 1/2 oz) brown sugar
1 egg, 1tsp vanilla extract,
1 cup (150g, 5 1/4 oz) plain (all purpose) flour, sifted
1/4 cup (30g/1 oz) cocoa powder, sifted
1 tsp bicarbonate of soda (baking powder)
125g (4 oz) dark chocolate, melted
280g (9 3/4 oz) dark chocolate, extra, roughly chopped

Turn your oven on to 160 degrees, so it can heat up.

Pop the butter and sugar into an electric mixer bowl and beat for 8-10 minutes until light and creamy.

Add the egg and vanilla and beat for another 3-4 minutes.

Stir through flour, cocoa, bi carbonate of soda and melted chocolate.

Stir through the extra chopped chocolate.

Roll tablespoons of the mixture into rounds and place on a baking sheet that has been lined with non stick paper and flatten slightly.  Don’t forget to leave room for the cookies to spread.  Bake for 10 – 12 minutes.  (I cooked mine for 12 minutes).

    Absolutely wonderful photographs. Donna Hay's books are great, aren't they? I recently picked up one of her book with lots of 'light and healthy' recipes in it. A challenge for her style and she nails it!
    I wish I could share in some of these cookies! x
