Happy Australia Day..Lamingtons Recipe
Happy Australia Day for Saturday 26th January. I hope everyone reading in Australia enjoys the long weekend and Happy Birthday Ellen! We like watching the Ellen Degeneres Show and her birthday is on Australia Day..she has mentioned it a few times on the show and seems genuinely excited her birthday is on this day.
Australia Day is celebrated annually on 26 January, the date commemorates the arrival of the First Fleet at Sydney Cove in 1788 and the proclamation at that time of British sovereignty over the eastern seaboard of Australia (then known as New Holland).
I thought I’d celebrate it with a lamington.
Lamingtons are a sweet of Australian origin they are squares of plain cake, dipped in melted chocolate and sugar and coated in desiccated coconut. Said to have been named after Baron Lamington, a popular governor of Queensland from 1896 to 1901.
They’re so good, this one is a giant lamington from Cooper and Milla’s filled with strawberry jam. They can also be filled with jam and cream or left plain.
